Ingredients
4 Bison Tenderloins
1 Tbsp Extra Virgin Olive Oil
4 Tbsp Garlic, minced
1 Tbsp Rosemary, freshly chopped
1 Tbsp Kosher Salt
1 Tsp cracked Black Pepper
Directions
Marinate bison steaks overnight in the refrigerator with oil, garlic, rosemary, and black pepper.
Preheat grill for direct cooking over medium heat (350 degrees F)
Remove steaks from refrigerator, remove large pieces of rosemary. Season with salt and pepper on all sides of meat. Allow the steaks to sit at room temperature for 15-20 minutes for optimal salt dilution into the meat.
Grill steaks on each side for approximately six-eight minutes for medium rare steak, depending on thickness of the meat. Grill longer for more doneness. Remove from grill and allow to rest 5 minutes before serving.
