Grilled Bison Ribeye

With Lemon-Mint Pea Purée.

Prep Time: 15–20 minutes
Cook Time: 12–15 minutes
Resting Time: 5 minutes
Total Time: ~35–40 minutes
Ingredients
For the Grilled Bison Ribeye:
4 bison ribeye steaks (6–8 oz each)
2 tsp kosher salt
1 tsp black pepper
1 tbsp olive oil
For the Purée:
2 cups fresh or frozen peas
¼ cup fresh mint leaves
1 clove garlic
1 tbsp lemon zest
2 tbsp olive oil
Salt to taste
Instructions:
Bring a small pot of salted water to a boil. Add peas and cook 3–4 minutes. Drain and blend with mint, garlic, lemon zest, olive oil, and salt until smooth.
Season steaks with salt and pepper.
Grill or sear the bison ribeye in a hot skillet with olive oil for 4–5 minutes per side (depending on thickness), until medium-rare.
Rest 5 minutes. Serve over the mint pea purée with extra lemon zest.
Add extra mint for garnish.
